Classic Fresh Tomato Sauce


This is another fabulous, fresh, lovely recipe and a great way to use those tomatoes in your garden.  It is by Delia Smith (one of my very favorite chefs) and the link is below.  It only uses tomatoes, an onion, garlic clove, fresh basil, and Parmesan.  It smells wonderful cooking and tastes even better.

You do have to peel the tomatoes.  The easiest way I’ve found is to make little diagonal slashes in the top and bottom of the tomato and then pour boiling water over them and let it sit for a minute or so.  Then the skins come off really easily.

Cooking for an hour and a half on low simmer…


Make some garlic butter so you can have some fab garlic bread…


And then enjoy! (I know you will!)
